kitchen incubator in Denver. Rural development at USDA supports loan guarantees
for such projects if they are situated in rural communities.

Grand Junction, CO also has a wonderful kitchen incubator. The organization
began with a business incubator and CDBG funded revolving loan fund. It
expanded to include a kitchen incubator as a response to the needs of local
orchards needing a way to maximize the value of their crops by processing
some rather than having to ship only fresh fruit. The model of SBDC, loan
fund, business and kitchen incubator all housed under one roof has been very
successful. (About 15 years ago I managed the loan fund, which has expanded
to include venture capital for entrepreneurs since I left.) Incubators have
been funded in some locations by EDA also.

Hi - this is an excellent list, following you all is definitely more of an inspiration than a displacement activity for me!
Kitchen Incubator looks like an interesting model, in particular with good service integration, although some of my 'google hits' on the matter have come up with caveats. I'm looking at this from a specifically urban point of view in order to establish and assess a case locally: can anyone help me find any examples from US or from anywhere else in this list?

Kitchen incubators are a hot topic right now with the small farm
direct marketing world, but there are not many well established model
programs in place yet.
Leslie Schaller, a fellow Farmers Market Coalition board member, works
for the Appalachian Center for Economic Networks
http://www.acenetworks.org/ ('http://www.acenetworks.org/') - in addition to multiple kitchen sites,
they offer a branding/marketing component as well as distribution for
retail sales.
There are a number of projects that are in the planning and granting
stage, so by this time next year you should be able to find additional
programs.

One of LISC's partners in Boston, Nuestra Comunidad, started a kitchen
incubator called Culinary Ventures for small food service entrepreneurs in
and near the Boston neighborhood of Roxbury where they are located.
Culinary Ventures remained afloat for awhile, but underperformed and
recently faltered and needed to be transferred to another entity. Might be
worth your time contacting Nuestra staff to hear of the specific challenges
they experienced and what they might have done differently based on lessons
learned.

Grand Junction, CO also has a wonderful kitchen incubator. The
organization
began with a business incubator and CDBG funded revolving loan fund. It
expanded to include a kitchen incubator as a response to the needs of

orchards needing a way to maximize the value of their crops by processing
some rather than having to ship only fresh fruit. The model of SBDC, loan
fund, business and kitchen incubator all housed under one roof has been
very
successful. (About 15 years ago I managed the loan fund, which has
expanded
to include venture capital for entrepreneurs since I left.) Incubators
have
been funded in some locations by EDA also.

busy recruiting new partners, planning media and marketing efforts, and
reaching out to local government officials.

University, New Jersey Society of CPAs, and WorkLife Program at Purdue
University. Waddell & Reed commented on the importance of America Saves
Week 2010 stating, "With the current state of the economy, people are
beginning to realize that they must begin to take the necessary steps to
save for tomorrow. The tools and resources that America Saves Week provides
will be invaluable for the betterment of those we serve."
. Since promoting savings and financial education is a year-long
campaign, we also offer quarterly resource packets focusing on one aspect of
savings. This quarter's focus is on the

* The International Foundation of Employee Benefits Plans is launching
a retirement readiness campaign and urging its members to spread the word of
risk tolerance. The Foundation plans to distribute these materials through
their websites, e-mail communications, and in February's Benefits &
Compensation Digest. Through their efforts, the Foundation anticipates more
than 100,000 plan participants will receive the message of developing solid
retirement plans.
* The Consumer Federation of America, America Saves' parent
organization, along with the American Savings Education Council, is planning
a press event for February to release new survey data on national savings
habits. More information will be available soon.
* JPMorgan Chase will be stressing the importance of long-term saving
for retirement by matching employee contributions dollar-for-dollar to a
sponsored 401K plan, up to 5%.
* The Louisiana Office of Student Financial Assistance is coordinating
a statewide event "Louisiana's College Goal Sunday Event" on February 21 to
provide students free one-on-one assistance from financial aid professionals
on preparing for college.
* WorldatWork will encourage employees to complete a confidential
online financial assessment during America Saves Week. Enrollees receive a
financial wellness score along with a personalized report outlining steps to
improve their financial situation. One-on-one financial coaching with
certified financial planners will also be offered to help motivate and
inspire savers.

My brief comment, based on my experience in working with a commercial
kitchen incubator in Brooklyn a few years back, is that marketing of food
products is a far more difficult issue than production. I would suggest
focusing two-thirds of one's efforts on supporting entrepreneurs in
successfully bringing their product to the customer. Food marketing
channels are often very difficult for small companies to access. We made
the mistake of focusing our efforts on assistance with production,
financing, and administration. Those are all extremely important but not
nearly as intractable as the marketing challenges.

I would agree. In our analysis of companies of this nature the hurdle is market share. Getting the attention of the buuer and getting contracts locked in is a primary concern. Note that these contracts are competitive and issied annually so it is often not enough to secure the client for the first buy. The business must be savvy enough to remain the primary choice by quality and timely delivery and also price to remain competitive. It is a great idea to have a seasoned person in place as the marketer for the products as well as a seasoned quality assurance staff.

My brief comment, based on my experience in working with a commercial kitchen incubator in Brooklyn a few years back, is that marketing of food products is a far more difficult issue than production. I would suggest focusing two-thirds of one's efforts on supporting entrepreneurs in successfully bringing their product to the customer. Food marketing channels are often very difficult for small companies to access. We made the mistake of focusing our efforts on assistance with production, financing, and administration. Those are all extremely important but not nearly as intractable as the marketing challenges.

I was the Founding Executive Director of La Cocina, a kitchen incubator,
in San Francisco's Mission District http://www.lacocinasf.org ('http://www.lacocinasf.org')

incubating food microenterprises that involved food industry
professionals from the very beginning. A program advisory committee
comprised of industry professionals with expertise relevant to that
particular business would interview candidates, provide input into their
incubation plan, and then provide one-on-one TA. Because of these
relationships, with distributors, product development firms, food
retailers, etc. we were able to develop a strong access to market
component. The access to market component also included an annual "Expo
Cocina," our own version of the fancy food show, during which
participants would develop relationships and develop accounts with
retailers, distributors, cafes etc.
It can be done, you just need staff with industry expertise and you need
to partner with industry from the very beginning.

My brief comment, based on my experience in working with a commercial
kitchen incubator in Brooklyn a few years back, is that marketing of
food products is a far more difficult issue than production. I would
suggest focusing two-thirds of one's efforts on supporting entrepreneurs
in successfully bringing their product to the customer. Food marketing
channels are often very difficult for small companies to access. We
made the mistake of focusing our efforts on assistance with production,
financing, and administration. Those are all extremely important but
not nearly as intractable as the marketing challenges.

Grand Junction, CO also has a wonderful kitchen incubator. The
organization
began with a business incubator and CDBG funded revolving loan fund.
It
expanded to include a kitchen incubator as a response to the needs of

orchards needing a way to maximize the value of their crops by

some rather than having to ship only fresh fruit. The model of SBDC,

fund, business and kitchen incubator all housed under one roof has

I'd agree that from what I've learned it's very difficult to make a kitchen incubator 100% self-sustaining. However, a good model that successfully incorporated donor funds with program revenues is La Cocina in San Francisco. (www.lacocinasf.org) Definitely contact them for best practices.

I would agree. In our analysis of companies of this nature the hurdle is market share. Getting the attention of the buuer and getting contracts locked in is a primary concern. Note that these contracts are competitive
and issied annually so it is often not enough to secure the client for the first buy. The business must be savvy enough to remain the primary choice by quality and timely delivery and also price to remain competitive. It is a great idea to have a seasoned
person in place as the marketer for the products as well as a seasoned quality assurance staff.

Grand Junction, CO also has a wonderful kitchen incubator. The

began with a business incubator and CDBG funded revolving loan fund.

Hi Annie! To second that, we never intended for La Cocina to be 100%
self-sufficient. Many had tried that and shut their doors as a result.
Because we had a social mission and served lower-income women with
start-up food businesses, we always expected to fundraise. After four
years we were approximately at 25% earned income, 10% government, 65%
foundations.

I'd agree that from what I've learned it's very difficult to make a
kitchen incubator 100% self-sustaining. However, a good model that
successfully incorporated donor funds with program revenues is La Cocina
in San Francisco. (www.lacocinasf.org) Definitely contact them for best
practices.

I would agree. In our analysis of companies of this nature the hurdle is
market share. Getting the attention of the buuer and getting contracts
locked in is a primary concern. Note that these contracts are
competitive and issied annually so it is often not enough to secure the
client for the first buy. The business must be savvy enough to remain
the primary choice by quality and timely delivery and also price to
remain competitive. It is a great idea to have a seasoned person in
place as the marketer for the products as well as a seasoned quality
assurance staff.

My brief comment, based on my experience in working with a commercial
kitchen incubator in Brooklyn a few years back, is that marketing of
food products is a far more difficult issue than production. I would
suggest focusing two-thirds of one's efforts on supporting entrepreneurs
in successfully bringing their product to the customer. Food marketing
channels are often very difficult for small companies to access. We
made the mistake of focusing our efforts on assistance with production,
financing, and administration. Those are all extremely important but
not nearly as intractable as the marketing challenges.

I was the Founding Executive Director of La Cocina, a kitchen incubator, in
San Francisco's Mission District http://www.lacocinasf.org ('http://www.lacocinasf.org')

incubating food microenterprises that involved food industry professionals
from the very beginning. A program advisory committee comprised of industry
professionals with expertise relevant to that particular business would
interview candidates, provide input into their incubation plan, and then
provide one-on-one TA. Because of these relationships, with distributors,
product development firms, food retailers, etc. we were able to develop a
strong access to market component. The access to market component also
included an annual "Expo Cocina," our own version of the fancy food show,
during which participants would develop relationships and develop accounts
with retailers, distributors, cafes etc.
It can be done, you just need staff with industry expertise and you need to
partner with industry from the very beginning.

My brief comment, based on my experience in working with a commercial
kitchen incubator in Brooklyn a few years back, is that marketing of food
products is a far more difficult issue than production. I would suggest
focusing two-thirds of one's efforts on supporting entrepreneurs in
successfully bringing their product to the customer. Food marketing
channels are often very difficult for small companies to access. We made
the mistake of focusing our efforts on assistance with production,
financing, and administration. Those are all extremely important but not
nearly as intractable as the marketing challenges.

Grand Junction, CO also has a wonderful kitchen incubator. The
organization
began with a business incubator and CDBG funded revolving loan fund.
It
expanded to include a kitchen incubator as a response to the needs of
local
orchards needing a way to maximize the value of their crops by
processing
some rather than having to ship only fresh fruit. The model of SBDC,
loan
fund, business and kitchen incubator all housed under one roof has
been
very
successful. (About 15 years ago I managed the loan fund, which has
expanded
to include venture capital for entrepreneurs since I left.) Incubators
have
been funded in some locations by EDA also.
